Whether in Cusco testing out infused pisco, in Lima for ceviche, trying piranha soup in the Amazon, or dining on guinea pig in the Sacred Valley, old becomes new in Peruvian kitchens.

While many aspects of Incan culture remain a mystery, you can see the ancient culture’s influence on contemporary culinary traditions. Dishes and ingredients include coca leaves, guinea pig, chichamade from local corn, and of course the pisco sour.
